Laiterie Charlevoix ÉCONOMUSÉE® du fromage

At Laiterie Charlevoix, you can observe the production processes for a variety of regional cheeses. Windows on the work areas enable you to watch the artisans in action. It's an opportunity to observe the principal steps in the production of various cheddars, of the Fleurmier (a soft cheese), of the Hercule which is made with the milk of Jersey cows and aged 12 to 18 months, and of the most recent addition, Le 1608, made with the milk of Canadienne cows, a heritage breed that is being reintroduced in Charlevoix.

The dairy also offers a guided tour that will demystify the manufacture of its products, and an exhibit featuring ancient cheesemaking tools and the history of the dairy and cheese industries in Québec.
