Fumoir Saint-Antoine

Perched in the bucolic heights of rang Saint- Antoine Nord of Baie-Saint-Paul, the Fumoir
Saint-Antoine is a must establishment. Johane and Serge offer delicious fish that is smoked according to an updated Amerindian tradition. The fish is smoked on wood slats; a cold smoking process that’s preceded by dry salting and that guarantees a unique texture and taste. Maple and fruit-tree flavours blend with a delicate combination of fine herbs, salt and sugar... This is a smokehouse with a difference: unlike most other producers, the only salmon it smokes is fresh Atlantic salmon from the East Coast of Canada.

The number of connoisseurs is on the rise and the
owners modified their installation in the spring
of 2010 to meet increasing demand. Now, these
quality regional products can be purchased in many areas of Québec. Smoked salmon and smoked trout are available at the Fumoir, in filet form or sliced, fresh or frozen. Smoked salmon rillettes are also a specialty of the Fumoir.
